Need some healthy fat in your diet? Why not! Especially when it contains omega 3 and omega 6 fats that provide numerous health benefits and help with weight loss. Here’s the combination of avocado in creamy pesto.  Healthy, nutritious and plant based meal for the entire family.

Ingredients (serves 3-4):
1 ripe avocado
2 tbsp lemon juice
1 tbsp yeast flakes
2 tbsp cashew nuts
1-2 tsp dried garlic
6 tbsp olive oil
1/2 chili pepper
handful of rocket
handful of basil
4 tbsp water
spaghetti pasta
Blend avocado with lemon juice. Ground the nuts and add to avocado. Add nutritional yeast, garlic, chili pepper, rocket, basil and blend again. Slowly add olive oil. Season with salt and pepper. Add water and mix.
Put the pasta to the boiling and salted water. Cook for about 9 minutes. Then drain pasta and mix it with pesto. Serve with vegan parmesan on top. Enjoy!
