New Year’s Eve is getting close. It’s time for some food for this special night that will satisfy everybody, not only vegans. Tofu strikes again:) Delicious and easy to make puff pastry rolls with tofu and green pesto. Have you got our version of vegan parmesan in stock? It will be one of the ingredients. These rolls can be served hot or cold. Perfect for busy people who need to prepare quickly something delicious that can be easily served with New Year’s drinks. Who’s going to try this recipe?
1 sheet puff pastry
handful of basil
handful of rocket
90g natural tofu
2 tbsp vegan parmesan
6 tbsp olive oil
Prepare the pesto. Blend basil, rocket and vegan parmesan with olive oil. Season with some salt and pepper. Then blend pesto with tofu.
Unroll the puff pastry. Spread the filling over the pastry (use a spoon). Roll up the pastry tightly. Cut roll into slices, approximately 2-cm wide Lay the rolls on a baking pan covered with baking sheet. Bake for about 25-30 minutes (temp. 200 degrees C). Serve hot or cold. Enjoy!
