Ingredients (serves 2-4):

4 potatoes

200 g cauliflower

2 carrots

1 parsley root

200 g broccoli

a piece of leek

400ml coconut milk

1 tsp thyme

2 tbsp olive oil

salt

black pepper

1 tsp colored garlic

2 tbsp nutritional yeast

Instructions:

Peel and cut the carrots, potatoes and parsley root into slices. Cook the potatoes for about 10-15 minutes.

Preheat the oven to 200 degrees C. Chop the leek finely. Divide the broccoli and cauliflower into florets. 聽Transfer the potatoes, carrots, parsley, broccoli and cauliflower into a large baking pan. Sprinkle the veggies with the olive oil. Season with some salt and pepper. Combine coconut milk with nutritional yeast, garlic and thyme and pour over the veggies. Bake the veggies for about 40 minutes. Then, turn on the grill mode and bake for another 10-15 minutes. Serve as a separate dish or with vegan fritters. Enjoy!
