VEGAN POLISH TRADITIONAL EASTER CAKE (MAZUREK) WITH TOFU

Traditional vegan Polish Easter cake called mazurek. Insanely sweet but sugar free traditional Polish Easter cake with tofu! Perfect  Easter cake in vegan and healthier version. Let the Easter begin!

Ingredients (tart pan – diameter 28cm):

 

Crust:

1 cup coconut shreds

1 cup nut flour

2 tbsp coconut oil (melted)

1 tbsp cacao powder

1 cup dates

2 tbsp water

Filling:

180 g natural tofu

4 tbsp hazelnut cream

1 tsp vanilla extract

1-2 tablespoons coconut liquor (optional)

fresh juice of 1/2 orange

2 tbsp peanut butter

220 ml coconut milk (solid part)

2 tsp almond extract

3 tbsp coconut oil (melted)

4-6 tbsp agave syrup

4 tbsp date/ maple syrup

Additionally:

Nuts, almonds, dried fruit etc for decoration

Instructions:

 

Grind the coconut shreds in a food processor. Then combine it with the nut flour. Put the dates in a bowl with very hot water and leave for 10-15 minutes. Drain  and blend well. Add the dates to the dry ingredients. Add cacao powder, coconut oil and water and mix well. Press the mixture into the bottom and sides of tart pan. Put it into in the fridge.

 

Blend tofu. Add  hazelnut cream, orange juice, vanilla and almond extract and blend again. Add peanut butter, milk, coconut oil and syrups and mix until the mixture is smooth. You can also add coconut liquor.

Transfer the mixture onto the crust.

Decorate with nuts, dried fruit. Leave in the fridge to cool over the night. Enjoy!
